Vegetable Hash Browns


Preparation Time – 30 mins 

Cooking Time – 20 mins Nutrition per serving: calories  400, fat 5g, carbs 21g, protein 7g, sugar 3g, potassium 35mg Ingredients: 2 tbsp olive oil 4 potatoes, grated and the excess water squeezed out  1 chopped onion

1 red pepper, chopped 1 green pepper, chopped 2 tbsp bicarbonate of soda 1 tsp cayenne pepper Salt and pepper 


1.Place the potatoes in a large bowl of water with the bicarbonate of soda. 

Leave to soak for 30 minutes 

2.Pat the potatoes dry and place into a bowl 
3.Add the spices and oil, combining everything well 
4.Cook for 10 minutes at 200C 
5.Add the other vegetables and cook for another 10 minutes
